BenwinM: courtesy of my son who is a bit of a cooking nerd (sound familiar? ) “Combustion” thermometer in this case, which has multiple sensing points.

BenwinM: the 9lb bird actually went in at 11:30 AM; it didn’t get probed until 1 PM. The discontinuity is when it came out for a bit to make room for the sweet potatoes, then draped with foil. That’s why it didn’t get back up to the same ambient.
